The historic city of Segovia, which is close to the Spanish capital Madrid, has a century-old restaurant, mason de candido, next to the famous Roman aqueduct. Three generations of the candido family have run the inn restaurant, famous for its roast suckling pig and gazpacho. A whole suckling pig can be pulled apart using only the edge of the plate to show its crispness. With the soft and glutinous leg meat, one bite is full of soup.
